The Farmer
It all starts with the famers. We source our organic wheat from the closest farmers possible, typically around Tamworth.
The Miller
Our millers use traditional methods and are true artisans at their craft. We even have a small mill where we do some of our milling in-house.
The Baker
Our bakers are passionate about their work, and you can tell with every bite. Baking is truly a skill that must be learned over time to manage the variations in daily temperatures, humidity and more.
The Time
Patience is a virtue, especially when it comes to baking. Our process takes over 9 hours, but the wait is well worth it.
The Sol
A Sol is our stone oven that can be fired by wood. Our oven is one of a kind on the Mid North Coast and makes delicious authentic bread.
